Didn’t think chicken fajitas couldn’t get any better? Think again. Our Smokey BBQ recipe gives the Mexican favourite a tasty PERi-PERi twist.
Smokey BBQ Fajitas

Ingredients
1 x Nando’s Smokey BBQ Wrap Kit
500g chicken mini fillets
2 x tbsp olive oil
1 x onion, thinly sliced
3 x mixed peppers, thinly sliced
2 x limes
A small handful of coriander or parsley
50g cheddar cheese, grated

Method
Step 1
Toss the chicken mini fillets with the Smokey BBQ Rub and set aside to marinate.
Step 2
Add the oil to a large frying pan and sauté the chicken until it's golden and cooked through – this usually takes around six minutes.
Step 3
Move the chicken to the edge of the pan and throw in the onions and peppers. Cook them for three to four minutes until they're softened, charred and have absorbed the Smokey BBQ Rub. Squeeze in the juice of one lime and season to taste.
Step 4
Warm the tortillas in the microwave or a small pan.
Step 5
Drizzle PERinaise over the wraps, pile with the chicken and pepper mix, and top with a healthy squeeze of Nando’s Sweet Chilli Jam from the wrap kit.
Step 6
Sprinkle with cheese and coriander, then serve with lime wedges and anything else you fancy.
