Ingredients
60ml PERi-PERi sauce (choose your flavour)
500g sausage meat
10 dried apricots, diced
Large bunch of fresh parsley, chopped
30g dried breadcrumbs
4 slices of white bread (crusts off)
1 large egg
Method
Step 1
Preheat oven to 200°c. Mix sausage meat with apricots, parsley, PERi-PERi sauce, and breadcrumbs.
Step 2
Lay bread slices in a line on a chopping board, slightly overlapping. Roll thinly with a rolling pin.
Step 3
Place meat into a long sausage shape and lay onto bread. Fold bread over the sausage, seal with fork and brush egg on the fold.
Step 4
Brush sausage roll with beaten egg, place on a lined baking tray and bake for 20 minutes or until cooked through and golden brown.
Step 5
To finish, cut into bite-size pieces and place on a cooling rack. Serve on a platter (if they last that long enough!).
